Fans of authentic Mexican cooking have another way to please the palate. Sizzling under the red roof of the former Pizza Hut are the original, south-of-the-border recipes of Azteca Mexican Restaurant, which opened May 7.

All the foods are prepared fresh by Mexican chefs using 100 percent vegetable oil, said co-owner Guillermo Leon Ramirez, who touts the Azteca special fajitas. Served fresh from the grill, the fajitas combine chorizo (Mexican sausage), jumbo shrimp, chicken, beef, onions, tomatoes, and bell peppers.
Also popular are the ribeye steaks, served with a variety of salsas and sides, he said.
Creating the full menu was natural for Ramirez, who also owns El Cazador Mexican restaurant in North Carolina.
Hours
11 a.m. to 10 p.m. Monday through Thursday, 11 a.m. to 10:30 p.m. Friday and Saturday and 11 a.m. to 9 p.m. Sunday.
Value
Lunch menu served from 11 a.m. to 3 p.m. Monday through Saturday ranges from $4.25 to $5.75. House specialties start at $6 for enchiladas rancheras and go up to $10.99 for the "mojara frita," a large fried talapa served with rice and salad, or $19 for a double order of Azteca special fajitas.
Atmosphere
Bright yellow and green accents spice up the already warm brick interior of this casual, sit down restaurant.
