Order your favorite Mexican dish at the counter of this popular, Minnesota-based franchise and watch it be made right before your eyes. The tortillas are pressed and cooked fresh for each order and filled with your choice of fresh vegetables, chicken breast or choice sirloin steak.

The restaurant's commitment to freshness, posted on the menu board, also states that 100 percent canola oil is used instead of lard, butter or MSG and there are no microwaves used. Still, it only takes 3-5 minutes to be served.

Then top it off yourself at the salsa bar, which includes six types of freshly-made salsas as well as slices of limes, onions and jalapenos, pico de gallo and grilled corn.

"I thought this was a good concept for Rochester," says owner Yuteng Chen about the healthy, fresh food served fast. He's lived here since 1985, but has been in the restaurant business even longer, having owned various Chinese and Cajun restaurants. "I always try something different," he says.

Chen opened Baja Sol, one of 10 Baja Sol restaurants in Minnesota, on Dec. 11. Already people from California are happy to see fish tacos, a California specialty, on the menu, he says.

Burritos, quesadillas and tacos are still the most popular foods though, Chen says.

Hours
10 a.m. to 8:30 p.m. Sunday through Thursday, 10 a.m. to 9 p.m. Friday and Saturday.

Value
Average $5, with all meals served with fresh-made tortilla chips.

Atmosphere
Clean, bright with many windows and warm red- and orange-colored walls.
